A Recipe for Bliss

Happy Easter lovelies.

Eostre, the Anglo-Saxon goddess of Spring, is considered the ancient namesake of the festival of Easter. It's about fertility, renewal, rebirth and the divine return. All of which are aspects of creativity. Whether or not you observe Easter, this week is a brilliant time to honour the connection with your creative spirit in whatever way feels good to you.

One of the things I love to do during this time is to get in the kitchen and create nutritious and delicious concoctions to share with my loved ones. Here's one of my recipes for bliss that I'd love to share with you!

Lelicious Raw Cacao and Coconut Bliss Balls

Makes approximately 22 regular sized bliss balls.

Ingredients
12 mejool dates (about 2 cups), pitted and chopped
2 cups shredded coconut
4 level tablespoons coconut oil, melted if needed
4 level tablespoons cacao powder
1 heaped tablespoon tahini
1 teaspoon vanilla essence
1/2 cup extra shredded coconut for covering, optional

Method
- Add the ingredients into a food processor or blender, one by one. Blend until well combined.
- Spoon the mixture out into a mixing bowl. Using your hands, roll one spoonful at a time into bite-sized bliss balls (about the size of a golf ball).
- Roll your bliss balls in the extra shredded coconut to coat them.
- Place in the fridge to set (or eat them immediately if you prefer!).
- Store in an air-tight container in the fridge.

Recipe Notes
- If your mixture is too dry, add a little more tahini one spoon at a time.
- If you find your mixture too wet, add a little more shredded coconut.
- No blender? No matter. Place your mejool dates in a pot of shallow water over medium heat. Gently stew them until soft and the water has been absorbed. Keep your eye on it, in case you need to add a little more water. Then, spoon into a mixing bowl and combine it with the rest of the ingredients. This method may add more moisture to your final mixture, in which case add more shredded coconut as needed.

Eat before they all go!

It's a bite-sized superfood for your super self.

I'd love to hear about how you connect with your creative spirit! In what ways do you connect or desire to connect with its essence? Add your comments below or be a part of the conversation on my Facebook Page.

Shine on, Jelena x

p.s. Honouring the connection with who you really are, in a way that feels good to you, is a brilliant recipe for personal bliss.

Your Creativity is One Clever Cookie

Creative Nudge Fridays is here!

Welcome to nudge #9. We're getting into some sweet business. With a pinch of salt.

The ways to nourish our blazing creative genius are infinite. Sometimes it asks us to get out tools like glue, scissors, paint brush, knitting needles, yoga mat, cd or djembe drum. Other times is calls us to get out our mixing bowl. And a spatula. Here is a nudge to encourage you to add a cup of conscious creativitea in your kitchen. It's a recipe. For baking a batch of homemade yum.

Lelicious Almond, Honey & Coconut Cookies
Makes approximately 24 cookies

Ingredients:
150g almond meal
150g plain flour
150g pure honey
80ml coconut oil
1 egg
1 teaspoons ground ginger powder *optional for a dash of subtle spice
1 teaspoon vanilla extract
pinch natural pink salt
handful of shredded or desiccated coconut

Method:
- Preheat oven to 175 degrees Celsius. Grease a baking tray with spray cooking oil or line with a baking sheet.
- In a mixing bowl add meal, flour, ginger powder (optional) and salt. Add honey, oil and vanilla extract. Whisk egg separately in a cup and pour into mixing bowl. Combine well.
- Use a teaspoon to scoop up the dough and roll into balls. Evenly space them on baking tray. Press each ball down flat using the back of a fork. *To prevent the fork sticking to the dough, dip the fork in warm water and tap dry on a tea towel.
- Sprinkle tops with a pinch of shredded or desiccated coconut.
- Place in oven for 12 mins or until golden.
- Let cool on a wire rack. And, enjoy!

Most of us spent time daily in the kitchen. Which makes it a brilliant place for daily creativity. Making edible creative goodness is nourishment for our being~ness, and it's even more nourishing when we get to share it with our loved ones.

May you always bake from your heART.

Create on, Jelena x

p.s. this recipe can be altered to suit your dietary requirements. If wheat flour is not for you, replace with almond meal (making the almond meal total 300g). Note, this will change the consistency of the cookies a little. Coconut oil can be found in your local heath food store, or can be replaced with melted butter.
